What are some must-see attractions in India for families traveling with a toddler?

Eleanor for 2 weeks, you'll need to pick 1 region. Kind of like someone saying they have 2 weeks to explore the US. Transport options will affect your ability to change regions also, depending if you're comfortable traveling by regular passenger train, plane, rental cars etc
I would decide if you want to explore more mountains, beaches, rainforest etc in terms of adventure and start there
Goa is SW and more of a resort area these days
SE (I forget the main city name) is mostly beaches
Mumbai and Pune are central west coast and offer a lot of temples and history, a smaller mountain range with beautiful waterfalls etc
Calcutta region is beautiful but also perhaps not ideal for traveling with an infant/toddler
Northern India has incredible mountain ranges and monk temples bordering on Mongolia

So is the East coast South of Chennai (Madras) - have heard of some travel warning for Goa for women - but yes Goa is beautiful

Depending on when in October, you are traveling, you might be able to catch the festival, diwali, in India. The celebration across the country is quite something. Depending on the experiences you are looking for, you could do quite a bit in 2 weeks. Delhi - Agra - fatehpur sikri - Jaipur - Delhi could be one itinerary. Mumbai - aurangabad - Ahmedabad - Udaipur - goa could be another. Bangalore - Mysore - ooty - Cochin - Chennai could be another. With a toddler in tow and jet lag, might affect your pace too. Happy to chat more if you are looking for specifics. Would highly recommend getting your tours planned prior to getting to India.

I'd go to Goa....or south india...a bit less crazy!! But....if you want the true India experience...the north is where you should go...Agra and Vernasi are something to see...but with a little one you may want more chill and Goa is like India' Mexico

I have been to India twice, each time for a month (independent travel both times, no tours). Still haven't been to Goa, so I guess it isn't a 'must' LOL. It really depends what you want to do and see - beaches? mountains? tea plantations? crazy busy amazing cities? historic buildings? yoga? cultural sites? festivals? religious ceremonies? You can't do it all in two weeks. The Golden Triangle is a common route, fantastic sight-seeing (fun thing - find the plaque in Jaipur that says it's a twin city with Calgary; and you can find same plaque in Calgary City Hall saying it's a twin city with Jaipur). Varanasi is fascinating, regarded as the spiritual capital of India. One thing we learned first trip is that the airport arrival experience is overwhelming, so many touts yelling, and once you fight the crowds to get into a taxi, they really do want to take you to their cousin's "best hotel", not where you ask them to take you; we chose to avoid that hassle the second trip (10 years later) by booking a car service for airport pickup - it was much nicer to scan the crowd for a sign with our name on it, knowing we'd have no challenges that first night for where we wanted to go. With a toddler especially, but also for yourselves, build in some down time (a day here, a day there, with nothing planned), just absorb whatever local stuff is happening around you.

Looking for flight options and things to do in India next October. It’s a huge country so I don’t even know where to start. We are quite adventurous and have a two year old.
