March 16-25 is spring break and is $$$. I would look for deals ( especially this Black Friday weekend) to the Mayan Riviera area and look each place up on trip advisor that suites your budget. If budget is not an issue.... the Xcaret hotel is opening brand new this December and have some discounted deals. I think air transat partners with them. There are many really nice AI’s in that area

Food was good....even my picky husband was impressed. There's a french restaurant (adults only), italian, seafood, seaside grill, world cafe. Good selection for room service as well.
Lots of entertainment day and night. Mariachi. Dancers. Singers. Acrobatics.
They have a lot of activities like archery, tennis, pool activities.

Royal Decameron, bucerias. It's got everything, good food, good beach, peaceful areas, clean and the staff are genuinely happy. Oh, and amazing entertainers

Hacienda Buenaventura, Puerto vallarta. It's a mostly locals resort that often can be found for cheap with flights included. Last November I did 6 days plus direct flights to and from Vancouver BC for like $850CDN

Le Reve Hotel and Spa in Playa del Carmen. A boutique hotel. Exceptional staff service and food is devine!

Yelapa, a 30 min boat ride from Puerto Vallarta, a small fishing village with no vehicles except those that take people and luggage around, is a good bet. US$20 a night and up for accommodation, boats leave every 30 min. or so from PV.
