Try the south coast of Spain, Costa del Sol. We went in early November and it was the start of their winter so accommodation was inexpensive and there were no crowds to fight. Temperatures were in the low 20's. Day trip to Gibralter and other sights around.

In the winter, I'd skip Europe unless i was going to visit a bunch of hot springs (Hungary and Turkey). That would be fantastic. Or in Japan, same deal.
Consider Vietnam, Hong Kong, Cambodia, etc! Not a beach vacation but a cultural one. Go see Angkor Wat, the ancient city of Hue, get some fancy new clothes tailored in Hoi An!

Merida Mexico - in the Yucatan - full of history - beach 20 mins away - no resorts - wonderful Mayan ruins - caves - cenotes - wildlife - no two days the same! westjet flies direct from mid December to mid April. You will love it!

I lived for 5 months in Guanajuato, central Mexico. Very cool and historic place. Maybe not enough for a full 2 weeks but you could also visit Mexico city and it would be a culturally rich trip.
